Theories and Models Used to Measure Performance Management in Hospitality Industry

I would like to gain some ideas on models and theories that can be used to measure the performance management in hotels. In fact I am doing my dissertation on performance management and I want to know which model I can use to design my questionnaires. Thank you in advance.

Are you interested in measuring A) how hotels deal with performance management, or in B) measuring the performance of a hotel, or in C) measuring the performance of people working in a hotel?
